Brownies

Rich, delectable, gooey and warming are but a few words to describe these brownies. They are great on their own or warmed and served with ice cream as a dessert.

Serves: 12 – 24 brownies

Method

  1. Heat a conventional oven (not fan assisted) to 170°c.
  2. Put the eggs and sugar into a large mixing bowl.

  3. Whisk the two together until they are incorporated.

  4. Put about 3cm of water into a saucepan and bring it up to a simmer. Then put the 150g of dark chocolate (not the chocolate chips) and the butter into a mixing bowl that is larger than the saucepan and put the bowl over the saucepan.

  5. Gently stir the butter and chocolate until they have both melted, then pour them into the egg and sugar mix while stirring the mix.

  6. Add the flour and baking powder to the mix and stir them in, ensuring there are no lumps of flour. Then stir in the chocolate chips and pour the whole lot into a roasting tin lined with greaseproof paper.

  7. Put the roasting tin into the oven and bake it for 30 minutes.
  8. Remove the roasting tin from the oven and allow it to rest for 5 minutes before taking the brownie out of the roasting tin and allowing it to cool.

  9. When the brownie is cool enough to handle, cut it into pieces and serve.

Useful Information

Can it be frozen? Yes, for 3 months.
Can it be prepared in advance? Yes, it can be finished up to 1 week in advance.
Will leftovers be nice? Yes, for up to 1 week.

Notes

- Try adding 250g of chopped white chocolate into the mix with the dark chocolate chunks at stage 6. It gives a great contrast in colour and because the chocolate doesn't really melt it creates a certain texture that is rather indulgent.

- To serve as a dessert just reheat gently in the oven for 5 minutes at 180°c, dust the top with icing sugar and serve with ice cream and a fruit compote if you like.
