Raspberry Coulis

This simple sauce is both sharp and sweet, a perfect accompaniment for chocolate puddings, pastry desserts and garnishes for ice creams.

Method

  1. Put the raspberries and icing sugar into the bowl of a food processor. the raspberrys and icing sugar
  2. Blitz them until they have formed a puree. blending the raspberries
  3. Push this through a fine sieve to remove the seeds. sieving the coulis
  4. Keep the coulis refrigerated until it is needed. the finished raspberry coulis
